'Garlic Chutney: 1. Add garlic pods, red chily powder, coriander and cumin powder, add salt. 2. Pound into grinder coarsely without water, keep aside Besan stuffing for Stuffed Brinjals: 3. In a vessel take required amount of besan flour, add above garlic paste, oil, coriander leaves. 4. Add salt as per taste, using little water mix the above ingredients and knead into dough. Brinjal Stuff : Long purple brinjal  5. Wash brinjal, slit them vertically in one side for stuffing. 6. Heat in kadai oil, add cumin seeds, let it splutter. 7. Add stuffed brinjal one by one, stir and fry till brinjal skin changes. 8. Add 1 cup water inside vessel, close the lid, add 1/2 cup water on the lid. 9. Let it cook for few minutes. Water inside the vessel and on the lid helps in dual heat. (use lid to close which can hold water). Color of brinjal becomes brownish green and tender. Chilly Stuff: 1. Clean chily, deseed, Slit green chilly for stuffing. 2. Add the masala stuff into green chily. (Besan stuff Dough) 3.
